MUSH ROOM FRIED RICE

INGREDIENTS:Cooked basmati rice  - 1cup
                          Onion - 1 chopped
                          Green chillies - 2 slits
                          Mushrooms - 200gms sliced
                          Salt - to taste
                          China salt( ajinamoto) - a pinch
                          Pepper powder - 1tbsp
                          Cashew nuts - 1tbsp
                          Oil - 1tbsp
                          Green peas - 2tbsp


METHOD:

1. Cook basmati rice in ratio of 1:2 adding salt, peas and 1tsp oil.(so that the rice does'nt stick each other)


2. Keep a pan  in stove and heat it adding 1tbsp oil.

3. Add cashew nuts and let it fry till little brown in colour.


4. Then add chopped onions and green chillies and saute well.


5. Slice  mushrooms and keep aside.


6. Now add sliced mushrooms and fry well until the smell disappears.


7. Add china salt and rice.


8. Cook the rice in high flame.(generally chinese dishes should be cooked in high flame)
9. Stir nicely adding pepper powder.


serve hot....................................

CHINESE VEGETABLE FRIED RICE WITH CHILLI PANEER

INGREDIENTS:
Basmati Rice - 3 cups
Spring Onions - 1 bunch                        
Capsicum - 1 medium
Beans - 1/2CUP(chopped)
Carrot - 1/2 cup (chopped)
Salt to taste
Ajinomoto - 1/4 tsp
Oil - 2 tbsp
Cashewnuts - 1tbsb(optional)
Green peas - 1/4cup
METHOD:
1. Clean the rice and cook in ratio of 1:1 basmati rice i.e 1cup rice-1cup water. If you want rice to be little soft add 1 and 1/2 cup water.
2. Add salt to the rice and 1tsp of oil while cooking.so that rice grains will not stick to one another.


3. Heat a  Kadai. Add 2 tbsp of Oil, to this add cashew nuts. 


4. Add  chopped  onions. Fry well.

5. Then add all the chopped vegetables. Sauté well with the flame high.

6. Keep sautéing till the vegetables are crisp and cooked. This dish requires the vegetables to be crisp and not over cooked.
7. Then add Ajinomoto, salt . Sauté well.
8. Slowly add the cooked rice and mix well. Add the pepper and adjust the salt. sprinkle the spring onion  over the rice.
9. Tasty tasty and healthy chinese fried rice is ready to serve................

NOTE: Cashewnuts and Green peas are optional. Generally they dont use in chinese fried rice. I used it for healthy purpose for my kid ,and he loves both of them.


CHILLI PANEER

INGREDIENTS:Paneer or Indian Cottage Cheese -1 cups (squares and deep fried to a golden brown)


INGREDIENTS FOR SAUCE:


Onions - 1 small chopped squares
Coriander leaves -1/4cup
Capsicum - quarter piece, chopped as squares
Green Chillies - 2 slit and trimmed
Garlic - 2 big pods, finely chopped
Ajinomoto - a pinch
Salt to taste
Oil - 2 tsp
Curd - 2tbsp

Lemon juice - 1tbsp
FOR BATTER: Maida - 2tbsp
 Corn flour - 4tbsp
Gingergarlic paste - 1tsp
Daneya powder - 1tsp
Salt - to taste
Chilli powder - 1tsp
Water (for mixing the batter)
 
METHOD FOR PREPARING BATTER AND FRYING PANEER:
 
1. Wash and cube the paneer.
2. Mix maida,cornflour
 
 
3. In it add gingergarlic paste,salt,daneya powder,and chilli powder.


4. Add some water and mix the batter like dosa batter.


5. And marinate the cubed paneer pieces in the batter for 10mins.


6. Heat oil in a kadai for deep fry.
7. Add the marinated paneer pieces in the oil and deep fry till golden brown colour.

 
8. Keep the fried paneer pieces aside.
 
FOR THE SAUCE:
1. Chop onions,capsicum.garlic,and green chillies.
 
 
2. Heat the oil in a pan.
3.  saute the garlic well.

4. Add onions and green chillies and fry them.

5. Then add the capsicum and simmer for 5 mins for it to get soften

.
6. Add the curd mixture.


7. Now add the fried paneer pieces,salt,china salt,chillipowder and fry well.


8. Let it become dry add choopped coriander leaves.
and squeeze lemon at the time of serving........................
Your tempting  chilli paneer  is ready .......................................


                               
                                                ONION RAITHA

INGREDIENTS:
Onions - 1 (chopped)
Green chillies - 1(chopped)
Coriander leaves - 1tsp(chopped)
Salt - to taste

METHOD:
1. Chop onions,green chillies,coriander leaves finely.



2. Add salt,curd and mix well.



3. Onion raitha is ready to serve.
4. Goes good with fried rice................
