RAGI ROTI WITH DRUM STICK LEAVES

INGREDIENTS:

1 cup ragi powder
1/2 cup drumstick leaves (u can prepare without this  also)
1/2 tsp mustard seed
1/2 tsp jeera
1 medium size onion chopped
2 greenchillies chopped
water to mix
salt to taste
oil for cooking

METHOD:

1. Take ragi flour and keep aside.



2. Chop onions , greenchillies, drumstickleaves.


3. First  take a pan heat it put oil add mustard, jeera ,let them crackle.


4. Add chillies saute it then add the onion and then add the greens



5.(i added chilli powder according to my taste as we eat more spice)
 add salt and mix well.


6. In a bowl take the ragi powder  then add the above fried things to this.


7. Then sprinkle water add mix it as we do for chappati or rotie . the consistency should be in such a way to flatten the dough ,ie it should not be too loose also.


8. Make the dough into handfull of balls each.



9. Then take a polythene cover apply oil on it with ur hand and then keep the dough ball on it and flatten the ball .



10. Heat the pan or dosa thava add a little oil and take this flattened roti by tuning upside down the cover over your palm and put that into the pan apply oil.



11. Allow to cook for 30 seconds in medium flame turn it the other side allow to cook as we do for chappathi.


12. Serve it with plain curd...................................


This is good for small children too as it contains lot of iron.............................................

TRI COLOUR SANDWICH

 FOR 1 SERVING:

INGREDIENTS:
Sandwich bread - 3 slices.

FOR FIRST LAYER: Green chutney (pudina - 1cup, coriander - 1cup, green chillies - 1, ginger - 1/4inch, lemon - 1, garlic - 2pods, salt, coconut - 2tsp(optional)



Grind all these together.


FOR THE SECOND LAYER: Butter or bread spread.
  if you wann you can even chop garlic and add it to the butter and mix and keep aside.
you get garlic butter spread.


FOR THE THIRD LAYER: Tomato sauce


METHOD: 1. Take sandwich bread or wheat bread.
2. Remove the brown part from the bread.


3. For the first slice apply green chutney.


4. For the second slice add butter to the both sides.


5. To the third slice add tomato sauce.


6. Heat dosa tawa add little butter and toast the bread.


7. Serve hot.............................................

This is really good for picnics............................................

MASALA ROTI

INGREDIENTS: Atta (whole wheat) - 2cups                        
                           Turmeric - 1/4tsp
                           Daneya powder - 1/4tsp
                           Garam masala - 1/2tsp
                           Onions (chopped) - 1
                           Greenchillies - 2(chopped)
                            Oil - 1tbsp
                            Chilli powder - 1/4tsp(optional)
                             Salt - 1/2tsp


METHOD:
1. Chop onions and green chillies finely.
2. Take whole wheat atta in a bowl.
3. Add chopped onions,greenchillies,daneya powder,turmeric,chilli powder,garam masala,salt and mix well.
4. Add 1tbsp oil and water and mix like chapati dough.

      

5. Let  it rest for 1/2an hour.
6. Pinch out equal balls of dough.

7.  Roll out by dusting in flour into disc of 6 diameter. Once the tawa is hot, grease with oil, cook these masala roti on high flame, making sure you don't burn it


8. Cook on both sides with a tsp of oil. When you see golden spots on top, the masala roti's are done.


9. Serve with carrot raitha / curd.................
