MEXICAN GREEN RICE

INGREDIENTS: Basmati rice - 1cup
                           Olive oil - 4 tbsp
                           Water - 2cups
                           Salt - 1/2tsp
                           Tomato - 1 chopped finely
                           Green colour - a pinch
                           Onion - 1 chopped finely
                           Capsicum - 1chopped finely
                          Garlic -3 pods
                          Coriander leaves - 3tbsp



METHOD:
1. wash rice. strain the rice and let the wet rice be in the strainer for 30 mins.
2. Heat 3tbsp oil in cooker add the rice.stir fry on low heat gently for 5 mins till well toased  and light    brown in colour.
3. Add the vegetables tomato,onion,capsicum,garlic,and fry little.
4. Add water, green colour,salt and mix well.
5. Cover it and cook till 2 whistles.

6. Garnish it with coriander leaves  and serve hot with burritos or refried beans.
